Diet has a great influence on the risk of developing several cancers. Nothing better illustrates this relationship that the high incidence of colon cancer currently observed in industrialized countries. Indeed, it is now established that about 75% of colon cancers are directly related to feeding typical of industrialized societies, that is to say rich in saturated fat of animal origin (meat, dairy), low in fruits, vegetables and fiber, and often characterized by excessive caloric intake with increased risk of obesity that follows. Probiotics: The composition of the intestinal microbial flora plays a major role in the development of colon cancer. Several observations suggest that some beneficial bacteria such as lactobacilli and bifidobacteria could prevent colon cancer. Moreover, studies on the effect of consumption of fermented milk products containing these bacteria known as probiotics. Fermented products show tha reduction in the development of colon cancer in animal models. Several fermented milk products containing probiotics such as bifidobacteria are now available in grocery stores and are therefore a valuable addition to the eating habits of people interested in cancer prevention. The devastation caused by colon cancer in industrialized countries represents a concrete example of the potential impact of diet on cancer development. It is however possible to reverse this trend and dramatically decrease the mortality associated with this disease. In this sense, changing eating habits in order to introduce the foods mentioned above and reduce consumption of saturated fat is undoubtedly the best way to achieve this goal.
